The Story Behind This Book
This book has the recipe for the royal rat. This is a paca fit for a queen. Gibnut "agouti paca" is a wild game mini pig that is a delicacy in Belize. Belize is formerly British Honduras and the Queen of England remains the ceremonial head of state. She was given delicious gibnut to eat on a state visit. As a Belizean myself, I am extremely excited that some took the time to sit down and document our cuisines in the way "we love it". Now I can get back into the kitchen with this cook book and enjoy the nostalgic moments.

Thank you for doing this!!! I believe everyone one should have a copy of this cook book, both Belizeans and none Belizeans. It's cultural as well as it is historic. I totally love it!!!
